Mexican-inspired Bowl


For the bowl:
  • 1 cup cooked brown rice
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup grilled corn kernels
  • 1/2 cup diced tomatoes
  • 1/2 cup diced avocado
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

For the chipotle-lime dressing:

  • 1/4 cup plain Greek yogurt
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 tbsp chopped chipotle pepper in adobo sauce
  • 1 clove garlic, minced
  • 1/4 tsp salt
Optional add-ins:
  • Grilled chicken or shrimp for additional protein
  • Roasted Sweet Potato cubes, Roasted red peppers or poblano peppers 
  • Sliced jalapeno peppers for a spicy kick

Instructions:

Cook the brown rice according to package instructions and let it cool.


In a large mixing bowl, add cooked brown rice, black beans, grilled corn kernels, 
diced tomatoes, diced avocado, and diced red onion.


In a small mixing bowl, whisk together Greek yogurt, fresh lime juice, honey, 
chopped chipotle pepper in adobo sauce, minced garlic, and salt.


Drizzle the chipotle-lime dressing over the bowl and toss everything together until 
well combined.

Add Optional add-ins, if desired.

Sprinkle chopped fresh cilantro over the top and serve with lime wedges.
