Italian-inspired Bowl

 For the bowl:

  • 1 cup cooked Farro or Quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup Roasted Red Peppers
  • 1-2 pepperoncini
  • 1/2 cup sliced red onion
  • 1 cup romaine, or spring mix
  • 1/2 cup canned chickpeas, drained and rinsed
  • 1/4 cup chopped fresh basil

For the Italian-style dressing:

  • 1/4 cup extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 clove garlic, minced
  • 1 tsp. parmesan cheese
  • 1/2 tsp dried oregano or Italian seasoning 
  • 1/4 tsp salt
  • freshly ground black pepper, to taste

Optional add-ins:

  • Grilled chicken, shrimp  or a dollop of fresh ricotta cheese for additional protein
  • Roasted eggplant , Kalamata olives or capers for extra flavor and nutrition

Instructions:

  1. Cook the Farro grain according to package instructions and let it cool.

  2. Prepare the dressing by whisking together olive oil, balsamic vinegar, honey, minced garlic, dried oregano, salt, and black pepper.

  3. In a large mixing bowl, add cooked farro, cherry tomatoes, roasted red peppers, pepperoncini, romaine, sliced red onion, canned chickpeas, and chopped fresh basil.

  4. Add a optional add-ins, if desired.

  5. Drizzle the Italian-style dressing over the salad and toss everything together until well combined.

  6. Serve immediately and enjoy.
