Greek-Inspired Bowl

 For the bowl:

  • 1 cup cooked quinoa
  • 1 cup chopped lettuce
  • 1/2 cup sliced cucumber
  • 1/2 cup sliced cherry tomatoes
  • 1/2 cup sliced red onion
  • 1/2 cup sliced kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley

For the Greek-style dressing:

  • 1/4 cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp. sugar, or honey
  • 1/4 tsp salt
  • freshly ground black pepper, to taste

Optional add-ins:

  • Grilled chicken or shrimp for additional protein
  • Chickpeas or white beans for a vegetarian option
  • Roasted red peppers for extra flavor and nutrition

Instructions:

  1. Cook the quinoa according to the package instructions and let it cool.

  2. Prepare the dressing by whisking together olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, sugar, salt, and black pepper.

  3. In a large mixing bowl, add cooked quinoa, chopped lettuce, sliced cucumber, cherry tomatoes, red onion, kalamata olives, and crumbled feta cheese.

  4. Add optional add-ins, if desired.

  5. Drizzle the Greek-style dressing over the salad and toss everything together until well combined.

  6. Divide the salad mixture into bowls and garnish with chopped fresh parsley.
