Baked Cod – Mediterranean Style

 This incredibly flavorful one pan meal is loaded with all the healthy benefits of a Mediterranean diet dinner recipe. With the light flavors of baked cod and potatoes surrounded by the rich Mediterranean flavors of tomatoes, olives, lemon, garlic, and tasty herbs.

Baked cod is such a classic staple of the Mediterranean diet and pairing it with potatoes and garlic is pretty much an every day way to enjoy this healthy fish.

Ingredients

1 lb (4)  cod fillets
28 baby potatoes, cut in half
salt and pepper, to taste
5 Tab. olive oil, margarine or a mixture
4 garlic cloves, with skin on
1 zucchini, asparagus, or brussels sprouts
Old Bay or Zaatar, to taste
1/2 cup olives
Juice and zest of one lemon and lemon slices, for topping
1/4 tea. red pepper flakes

Instructions

Preheat the oven to 450 degrees.

Wash and slice baby potatoes as need and add them to a baking pan. Drizzle with olive oil. Season with salt, pepper and garlic.

Place it in the oven for 30 minutes.

While the potatoes are baking, prepare the remaining ingredients. Slice and season the green vegetable.

Mix together margarine/olive oil, garlic, red pepper flakes, lemon juice and zest.

After 30 minutes, remove the pan from the oven. The potatoes should be crispy on the edges and browned.

Lay the cod fillets in the pan with the potatoes, and add the olives, and your green vegetable to the pan. Pour the margarine mixture over the cod fillets and top each piece with a slice of lemon. Sprinkle with Old Bay or Zaatar.

Return the pan to the oven and bake for another 8 to 10 minutes.

Check the internal temperature of the fish, which should be around 145 degrees.

Plate up the baked cod dinner, and serve.
