Salad dressing: Pour 3 tablespoons of your favorite salad dressing in the bottom of the jar. See recipe below.
Hard vegetables: Next, add
1/2 cup sliced cucumber and 1/2 cup sliced red onion.Beans, grains, and pasta
(optional): Optionally you can next, add chickpeas or white beans.Cheese and proteins: Next, add
1/2 cup crumbled feta cheese. You can also optionally add grilled chicken or shrimp.Softer vegetables and fruits : Next, add 1/2 cup sliced cherry tomatoes and
1/2 cup sliced kalamata olives and optionally, roasted red peppers.Nuts, seeds, and lighter grains: Next, add
1 cup cooked quinoa.Salad greens: Add
1/4 cup chopped fresh parsley, and last but not least, fill the rest of the jar with
1 cup chopped lettuce. Use your hands to tear them into bite-sized pieces. It's fine to pack them into the jar fairly compactly.- To Make the Salad Dressing:
- 1/4 cup extra-virgin olive oil
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1/2 tsp dried oregano
- 1/2 tsp. sugar, or honey
- 1/4 tsp salt
- freshly ground black pepper, to taste
