Greek-Inspired Salad in a Jar

 

  1. Salad dressing: Pour 3 tablespoons of your favorite salad dressing in the bottom of the jar. See recipe below.

  2. Hard vegetables: Next, add 

    1/2 cup sliced cucumber and 1/2 cup sliced red onion.
  3. Beans, grains, and pasta 

    (optional): Optionally you can next, add chickpeas or white beans. 
  4. Cheese and proteins: Next, add 

    1/2 cup crumbled feta cheese. You can also optionally add grilled chicken or shrimp. 
  5. Softer vegetables and fruits : Next, add 1/2 cup sliced cherry tomatoes and 

    1/2 cup sliced kalamata olives and optionally, roasted red peppers.
  6. Nuts, seeds, and lighter grains: Next, add

    1 cup cooked quinoa.
  7. Salad greens: Add 

    1/4 cup chopped fresh parsley, and l

    ast but not least, fill the rest of the jar with 

    1 cup chopped lettuce. Use your hands to tear them into bite-sized pieces. It's fine to pack them into the jar fairly compactly.
  8. To Make the Salad Dressing: 
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp. sugar, or honey
  • 1/4 tsp salt
  • freshly ground black pepper, to taste
