Fresh Corn Salad

This recipe is modified from the recipe at Healthy Food for Living.

6 ears of corn, lightly steamed and cut off the cob or 3 cups lightly steamed corn kernels
6 green onions, sliced thin
3 Tbsp red onion, finely diced
3 Tbsp cilantro, chopped
3 Tbsp lemon juice
3 Tbsp olive oil
1 Tab. sugar
1 1/2 tsp. ground cumin
1 tea. salt
1/2  black pepper

In a medium bowl, place the corn kernels, sliced green onions, diced red onion, and chopped cilantro.
Add lemon juice, lime olive oil, sugar, cumin, salt and pepper. Toss to coat. Taste, and season with additional salt and pepper, if desired. Serve chilled or at room temperature.
