Salad Bowls for a Crowd




 Dressing

3/4 cups Apple juice concentrate

 3 Tab olive oil

1/3 cups Balsamic vinegar
img
1/2 tsp salt
img
1/2 tsp black pepper

1 Tab. garlic
minced

4 oz. Baby spinach
fresh, leaves
Salad
img
8 oz. Tomatoes
fresh, diced
img
4 oz. Cucumbers
fresh, diced
img
4 oz. Carrots
fresh, shredded
img
1/3 cup Red onions
fresh, thinly sliced
img
1/2 lb Cranberries
dried
img
23 Eggs
boiled, diced
img
4 oz. Apples
diced, fresh
img
1/2 lb Baby spinach
fresh, leaves
3/4 lb Romaine lettuce
fresh, shredded



Dressing: Pour apple juice concentrate, olive oil, vinegar, salt, pepper, garlic, and spinach into a blender. Blend on high speed until dressing is liquefied and smooth. Mix for 3–5 minutes. DO NOT OVERMIX.

Assembly per bowl:

First layer: 2 Tbsp spinach dressing on the bottom of each container.

Second layer: 1⁄4 cup tomatoes on top of spinach.

Third layer: 1⁄8 cup cucumbers on top of tomatoes.

Fourth layer: 1⁄4 cup carrots on top of cucumbers.

Fifth layer: 1⁄4 cup onions on top of carrots.

Sixth layer: 2 Tbsp cranberries on top of onions.

Seventh layer: 1⁄2 cup eggs on top of cranberries.

Eighth layer: 1⁄4 cup apples on top of eggs.

Ninth layer: 1⁄2 cup lettuce on top of apples.

Protein Bento Box Lunch



  • Roasted chicken breast
  • Cherry tomatoes and/or avocado
  • 2 boiled eggs (or 2 little quiches)
  • A sliced red apple
  • A tablespoon of peanut or almond butter

 

Fruit and Yogurt Bento Box Breakfast or Snack





  • Just place a (5.3 oz) Greek yogurt or coconut yogurt  in the lunch box, add 1 Tablespoon maple syrup, if desire.
  • Put 1/4 cup granola in a cup and add that to the box as a topping for the yogurt.
  • Add 1/4 cup mixed nuts, a whole apple and a plastic knife. 
  • Put about a Tablespoon of peanut or almond butter into little cups and include that in the box.
  • Add 1 cup mixed berries to the box.

 

🍎 Apple, Grape and Celery Salad

1/4 cup pecans, coarsely chopped
2 stalks celery, thinly sliced on diagonal
1 apple, cored and thinly sliced or chopped
1 cup red grapes, halved
2 Tbsp white wine vinegar
2 Tbsp olive oil

salt and pepper

In a large bowl, combine all the ingredients and toss to combine.
