Mediterranean Lamb Burger

These burgers are made with ground lamb, feta cheese, spinach, and spices. Once you make and freeze them, all you will have to do is sear or grill for a flavorful protein in just a few minutes. Get the burger fixin’s ready — buns, lettuce, tomato, onion, or whatever you like.

1 lb. ground lamb
10 oz. box frozen chopped spinach, thawed and drained
1 small onion, finely chopped
2 cloves garlic, crushed
1⁄2 cup breadcrumbs
1 egg
4 oz. feta cheese, crumbled
3 tablespoons grated parmesan cheese
1 tablespoon lemon juice
1 tablespoon chopped fresh mint
3 tablespoons chopped fresh parsley
salt & freshly ground black pepper

Mix the ingredients together in a large bowl.
Form into 8 patties about 3inches in diameter.
Pan fry, grill or broil about 8 minutes each side, or until cooked through and done to your liking.
