Basil, Zucchini and White Bean Salad

15 oz. cans Great Northern beans
2 Zucchini, small dice
1 Yellow pepper, small dice
1/2 cup chopped Green Onion
1/3 cup Olive oil
2 Tab. Lemon juice
1 clove Roasted garlic 
1/4 cup Pesto
1 tea. Salt
1/2 tea. White pepper

  • Rinse beans in colander and place in a large bowl.
  • Dice zucchini, yellow pepper and green onion, place in bowl with beans.
  • Whisk oil, vinegar, lemon, roasted garlic, pesto, salt and pepper. You can also blend in a food processor or mix with a hand-held blender.
  • Pour dressing over the other ingredients and mix gently.
  • Serve or refrigerate until serving time.
