Cilantro-Harissa Grilled Corn
For every 2 cobs of corn:
3 tablespoons margarine or butter–softened
2 tablespoons chopped cilantro
1 1/2 teaspoons harissa
1/2 teaspoon salt
black pepper to taste
canola oil
Pull back corn husks, keeping husks in tact. Clean away the corn silk.
In a small bowl, mix softened margarine or butter, cilantro, harissa, salt, and pepper. Smear this mixture all over the corn cobs. Wrap husks around smeared cobs. Rub a small bit of canola oil on the outsider of the corn husks. Grill corn for ~ 10-15 minutes, rotating the corn every 3 minutes. Serve warm.
