Caribbean Summer Salad


1/4 cup orange juice
2 Tab lime juice (can sub. lemon)
1 1/2 tsp thyme leaves
1/2 tsp. Cinnamon
1/2 tsp. Garlic powder
1/2 tsp. Salt
1/8 cayenne pepper
3 nectarines and peaches, cut into cubes (2 cups)
3 ears corn, cooked and cup from cob (about 2 cups)
1-15 oz. can black beans, drained and rinsed
1/4 cup finely chopped celery

Mix orange juice, lime juice, honey, thyme, cinnamon, garlic powder, salt and cayenne pepper in a large bowl until well blended. Add nectarines or peaches, corn, beans and celery. Toss to coat. Best if refrigerated for at least 1'hour.  Toss again before serving.
