1 cup golden raisins
1 1/3 cup hot water
2 Tab. Canola or olive oil
3 cups diced Onion
4 cloves garlic, minced
Salt and pepper tt
4 tea. Chili powder
4 Tab. Tomato paste
2 (15 oz.) Black beans, drained and rinsed
1 1/3 cups sliced green olives
1 cup fresh or thawed frozen corn
4 Tab. Cilantro, Chopped
Cooked rice
1 1/3 cup hot water

Cook rice according to package directions.
In a small bowl, combine raisins and the hot water. Let soak.
Meanwhile, heat the oil in a large skillet and then cook the onions, garlic, salt and pepper together for about 3 minutes. Add Chili powder and Tomato paste, and cook, stirring for another 3 minutes.
Stir in corn, Beans, Cilantro and the raisins with their soaking liquid. Simmer for 5 minutes.
Serve over rice.
