12 oz. Lean ground turkey breast
1/8 cup Chili powder
1 Tab ground cumin
1 tea turmeric
1 1/2 oregano or Italian seasoning
1 Tab Canola or olive oil
1 large onion, chopped
4 garlic cloves, minced
2 cans green chilies
1 can ( 28oz) Diced tomatoes
1 can ( 14 oz) Vegetable broth
1 can ( 19 oz) Black Beans
1 can ( 19 oz) red kidney beans
Cook ground turkey with spices in a large skillet, breaking meat up with a spoon, until browned (4-5 minutes). Set aside.
Heat oil in a large pot and cook onion 3-5 minutes. Add garlic and chilies. Cook 1-2 minutes. Add tomatoes, broth and ground turkey. Simmer 45 minutes.
Stir in the beans. Simmer an additional 15 minutes.
Serve with Avocado salsa.
2 medium avocados
1 medium Tomato, diced
1/4 cup diced red onion
1 small jalapeño, minced
2 Tab chopped Cilantro
2 Tab lime juice
1/4 tea salt
1/4 tea. chili powder
1/2 tea. cumin
Toss everything together in a medium bowl.
Note: To make some Vegetarian, leave the meat out and put the spices in with the onions. Each person can add the meat or not as they wish.
Note: To make the salsa easier to make, you can buy already mixed Fresh Salsa and use a 5 oz. container of that in place of the tomato, red onion and jalapeno.
