Mushroom Masala

2 Tab olive oil
1 tea cumin seeds
1 red onion, thinly sliced
2 cardamom pods (or 1 tea ground cardamom)
1 bay leaf
1 tea fenugreek powder
1 Tab garlic paste
1 tea ginger paste
1 cup fresh or frozen Peas
1 red hot pepper, finely diced
2 packages whole Mushrooms
1/2 tea salt
1 tea coriander
1 tea garam Masala
1 tea turmeric
1 can petite diced tomatoes

Add everything in a large pot, one at a time, stirring between each addition. Reduce heat to low and simmer 20-25. Serve over rice.
