Mushroom Cerviche

The vegetables that accompany the mushrooms can be any raw garden vegetables, chopped or thinly sliced. Use what is in season.

16 oz. Mushrooms, thinly sliced
1 red onion, thinly sliced
1 green and 1 red bell pepper, thinly sliced
1/3 cup shredded carrots
2 tea finely diced jalapeño

2/3 cup lemon juice
1 cup Vegetable broth
1 Tab chopped cilantro or parsley
4 cloves garlic, minced
1/2 tea honey
2 Tab olive oil
1 tea turmeric
1/2 tea Black pepper
2 tea salt

Whisk together the second list of ingredients in a bowl. Add vegetables and gently but thoroughly combine. Chill before serving.
