Greek Couscous Salad

2 cups couscous cooked
1 cucumber peeled and chopped
1 tomato chopped
1/2 cup red onion chopped
1 cup garbanzo beans rinsed and drained
4 Tbsp lemon juice
2 Tbsp olive oil

Combine couscous, cucumber, tomatoes, onion, garbanzo beans in a large bowl. Whisk together lemon juice and olive oil. Pour over couscous salad and stir well. Cover and marinate in the refrigerator 2 hrs.
