Black Eyed Peas and Pasta

1 cup Green Bell Peppers, chopped
1/2 cup Onion, chopped
1 Jalapeno Pepper, seeded and chopped
3 cloves Garlic, minced
1 Tbsp Olive Oil
1-28 oz can Crushed Tomatoes
1-15.5 oz can Black Eyed Peas rinsed and drained
3 Tbsp Cilantro, minced
1 tsp Cider Vinegar
1 tsp Sugar
1-16 oz package whole wheat Bow-Tie Pasta

Cook the pasta according to the directions on the box.
In skillet, saute green pepper, onion, jalapeno, garlic in oil until tender. Add tomatoes; bring to boil. Simmer, uncovered, 10 min. Stir in peas, cilantro, vinegar, sugar. Simmer 10 min longer. Toss w/ pasta.
